March 20 is the Great American Meatout, a day to try those meatless recipes
you've been thinking of trying out someday.  If you can't find them in your
cabinet, how about dicing up tofu and adding it to your spaghetti sauce
with some black olives, or putting a delicious condensed green pea soup
over a mixture of cooked red and short grained rice and dicing up almonds
to sprinkle on top.

If you freeze tofu, it becomes spongy when it thaws and easily absorbs
other flavors as you stir fry it. Or you could add it to a thick, condensed
black bean or navy bean soup with some button mushrooms and put that over a
plate of delicious red rice.  You'll find it has all the appetite
satisfaction you expect in a"meat and potatoes" dish.
